Consider the setting. A romance set in a small town, a bakery, a bookstore, or a beach house probably has a simpler, more contained plot than one set in a cutthroat corporate empire, a royal court, or a galaxy at war.
The environment often dictates the scale of the story. Choose a cozy, familiar setting for a cozier, easier-to-follow plot.
I find that books with a very strong, simple premise are easier. 'Two people get stuck in an elevator.' 'Rivals assigned as co-best men for a wedding.' 'Someone accidentally sends a flirty text to the wrong number.'
The entire story springs from that one clear event. The scope is naturally limited, and the plot develops from exploring that single situation deeply, not from adding more and more external complications.
Look for romance novels that are also mysteries of the heart. The 'plot' is the protagonist figuring out their own desires and overcoming internal barriers to love.
That kind of plot is deeply engaging but not overwhelming because it's all psychology and emotion—things we all grapple with. You're not tracking clues; you're tracking personal growth.
Read the ending first. I know, blasphemy! But if plot overwhelm comes from anxiety about where the story is going, just peek at the last few pages. See that they end up happy and together.
Now you can relax and enjoy the ride without the nervous tension. You're reading for the experience, not the surprise. It completely changes the reading mood.

The reader can feel the intensity of the characters' experiences without the stress of wondering if they'll survive a dragon attack. The focus stays purely on the human heart, which is plenty dramatic on its own.
