I'm way more into crossovers that actually take the weirdness of 'Adventure Time' and match it with something tonally different, rather than just sticking it with another cartoon. There was one with 'The Witcher' of all things, 'A Continent's Curse,' that absolutely shouldn't have worked but somehow did? It treated Ooo like a post-magical-apocalypse region Geralt gets contracted to investigate. The writer really thought about how the Candy Kingdom's magic would be classified as a monster, or how Marceline's existence would be a complete philosophical crisis for that world's scholars. It wasn't a comedy, which was the surprise; it played the horror and melancholy totally straight. The last update was a while ago, so I don't know if it's abandoned, but the chapters that are there build this incredible sense of eerie, ancient wrongness that fits both series better than you'd think.
Most of the 'Steven Universe' mashups feel too obvious to me—like, yeah, both are colorful and about feelings, but they often end up too saccharine. I'd rather see Finn and Jake dealing with the brutal political scheming of something like 'A Song of Ice and Fire' or the cosmic horror of 'Bloodborne'. There's a short, complete one called 'Hunters in the Snow' that crosses with 'Bloodborne' where Finn's arm gets replaced with a Trick Weapon and Jake keeps trying to befriend the little Messengers. It's dark, but it keeps Finn's core optimism, which makes the contrast work.
Honestly, my main gripe is finding crossovers that remember 'Adventure Time' can be genuinely scary and sad, not just wacky. The good ones use the crossover to highlight that buried darkness.
I recently stumbled upon this gem called 'Broken Strings' on AO3, and it wrecked me in the best way. Finn and Jake’s bond is tested when they uncover a forgotten memory from their past, forcing them to confront buried guilt and unspoken fears. Bonus points for using 'Time Adventure' as a thematic anchor.
