I just use the browser on my phone and a ton of open tabs. Before a flight, I open all the tabs with stories I intend to read. As long as I don't close Safari/Chrome, the pages are usually cached and I can read them offline. It's a chaotic, stress-inducing method that my partner makes fun of me for, but it works in a pinch. My 'For Later' tab group is a graveyard of half-read sapphic webcomics and short stories from obscure blogs. Not recommended, but it's my reality.

The official Reddit app lets you save posts, and I think you can view saved posts offline? Or you could copy-paste text into a note.
