Man, I binged the whole 'Anita Blake, Vampire Hunter' series by Laurell K. Hamilton back in college over one long, weird summer. It starts out with this really strong detective-meets-supernatural vibe with slow-burn tension, but heads up, it takes a sharp turn into super explicit paranormal erotica around book six or seven. It's a completed arc for the early plotlines, though she's still writing new ones, so you can stop at a natural endpoint. I'd only recommend it if you're cool with the genre shift and want something very adult and morally grey.
For a totally different flavor, 'The Parasol Protectorate' by Gail Carriger is finished and utterly charming—steampunk vampires with Victorian manners and a hilarious, pragmatic heroine. It’s five books, and they’re witty and fast-paced, perfect for when you want romance with a side of clockwork and tea.
If you want something completed and off the beaten path, try 'A Discovery of Witches' trilogy. It's more historical fantasy with a vampire romance central thread. The relationship builds slowly alongside a great magical academia plot. All three books are out, so no waiting.
For completed series, maybe look at 'Black Dagger Brotherhood' by J.R. Ward? I see it recommended a lot for this, but I have a bit of a contrarian take. It's technically ongoing, but the early core books (like the first dozen) form their own completed saga with resolved pairings. The later ones feel like a separate, diminishing-returns phase to me. The first few are this intense, gritty, hyper-masculine vampire world with a unique slang that's either fun or cringe. The romance is super possessive and dramatic. It's a binge if you stop after 'Lover At Last' and treat it as a finale.
