The best ones I've found aren't always tagged as slow-burn. Look for political intrigue AUs or post-canon fix-its where Wilhelm's duties are a real barrier. There's a fantastic one where Simon becomes a music therapist and Wilhelm is a client dealing with public anxiety. The romance develops over months of sessions, built on vulnerability, not just attraction.
Avoid the coffee shop AUs if you want genuine slow-burn; they often rush it. The real gems are in the longer, chaptered fics that delve into the psychological weight of their positions. Sometimes the author abandons it right before the climax, though. So frustrating.
