'Dear John' again—Sparks. That one hit hard with the military angle. The movie with Amanda Seyfried and Channing Tatum is solidly in the middle of the Sparks adaptation pack for me. Not the best, not the worst.

'Bridget Jones's Diary' is the gold standard, honestly. It showed you could adapt a modern, funny, flawed heroine's romantic mishaps into a blockbuster. It probably opened the door for a lot of the later 'chick-lit' adaptations in the early 2000s, even if they weren't all as successful.

For a newer example, 'Red, White & Royal Blue' by Casey McQuiston was a NYT bestseller. The Amazon Prime film adaptation was fun and captured the gleeful fanfiction-esque vibe, though it obviously condensed a lot. It’s a great example of a queer romance hitting the mainstream in both formats.
