What's the rush? The influential series aren't going anywhere. Pick one. Read a few chapters. If it's not clicking, put it down and try another. There's no test at the end. The goal is enjoyment and expansion of your mind, not checking off a prestige list. The right one will grab you and not let go.
Go to a used bookstore and wander the sci-fi section. Pick the book with the coolest, most worn-out cover. That's the one generations of readers have passed around. There's a good chance it's influential purely by virtue of being loved to death. My copy of 'Hyperion' looks like it survived a war, and it's the best book I own.
Read the one with the premise that makes you say 'how has no one done this before?' For me, that was 'Anathem' by Neal Stephenson. A thousand-page novel about mathematician-monks in an alternate-world monastery? Sounds bonkers. Is bonkers. And is one of the most brilliantly constructed things I've ever read. Its influence is in its sheer audacity.
Honestly, the most influential book is the one that makes you want to read more. For some, that's the philosophical depth of 'Blindsight'. For others, it's the adventure of 'Old Man's War'. For others still, it's the cozy found-family feels of 'The Long Way to a Small, Angry Planet'. Find your gateway, and the path to the classics will open up naturally.
Consider the 'Gateway' trilogy by Frederik Pohl. It's a brilliant, cynical, and psychologically complex series about the risks and exploitation of finding alien tech. It's not as flashy as some, but its take on capitalism, luck, and human frailty is incredibly sharp. It influenced a lot of darker, more psychological SF.
