Honestly, I think the term 'beginner' can be misleading. It depends on what they're moving from. If someone mostly reads comics or watches anime, Brandon Sanderson's 'Mistborn' might actually work. The magic system is so clearly defined it's almost a science, and Vin's journey from street urchin to heroine is straightforward to follow. The prose is very accessible compared to a lot of other fantasy out there.
My brother hated reading until he picked up 'The Hobbit' on a camping trip. Said it felt like someone was telling him a story by the fire. So maybe that's the real trick: finding an adventure that feels spoken rather than written.

I have a soft spot for YA because the stories often get straight to the adventure without getting bogged down. 'The Lightning Thief' by Rick Riordan is a perfect gateway. The chapters are short, the humor is snappy, and you're learning about Greek myths without even trying. It has a very modern voice that doesn't feel like it's talking down to you.
