A lot of paranormal romance gets labeled slow burn, but most feel rushed to me. An exception is Nalini Singh's 'Psy-Changeling' series. The first book, 'Slave to Sensation', sets up a world with three races: the emotionless Psy, the tactile Changelings, and humans. The worldbuilding of the PsyNet and changeling pack structures is complex and unfolds over many books. Each book features a different couple, but the overarching plot is a slow-burn saga.
