One trick I've seen that works is removing Paolo Cassano from the equation entirely. What if Vincenzo arrives in Korea for a completely different, mundane reason? Maybe he's there to oversee a legitimate family wine export deal and gets tangled in something unrelated to the Babel mess. It lets you build a new antagonist system from scratch without rehashing the show's central conflict.
Another angle is leaning harder into the 'fish out of water' comedy-drama with original stakes. I read one where Vincenzo gets roped into helping a small, struggling theater troupe being pushed out by a real estate developer—no gold, no international conspiracies, just local corruption and his unique skill set applied to a smaller, more human-scale problem. The original plot came from transplanting his character into a wholly new scenario that still allowed for his brand of ruthless, elegant problem-solving. You have to detach him from the show's MacGuffin to find new stories.
