While he has Targaryen heritage and has fought valiantly against the White Walkers, he wasn't the one who ultimately killed the Night King. In the prophecy, the prince is supposed to be the one to bring an end to the great darkness, and that task was accomplished by Arya.

Also, Daenerys, who has a stronger claim to the Targaryen throne, was initially thought by some to be the promised prince due to her dragons and power.
