Look, I'm gonna be that person and say the best 'Shantae x Bolo' stories aren't really about them as a couple. The dynamic works way better as a background element in fics that are more about Shantae's world. There's this one crossover with 'Monster Hunter' where Bolo is just relentlessly, uselessly pining while Shantae is off hunting beasts, and it's hilarious and strangely sweet because it's so low-stakes. It feels more genuine to their characters than the big dramatic confessions.
AO3 has a few tags for them, but you gotta sift through a lot of Rottytops-centric stuff and genfics. Filter by 'Shantae/Bolo' and then maybe sort by kudos from the last few years; the older stuff tends to be shorter and less developed.

If you're desperate for content, your only real option is to comb through Archive of Our Own. The pairing tag is pretty sparse, but I found a cute modern AU where they're baristas. It's fluff, basically, but sometimes that's all you need. The writer captured Bolo's earnest clumsiness perfectly. It focused on them dealing with the fallout of a big battle, Bolo getting hurt trying to protect her, and Shantae realizing she's terrified of losing him. The author got their banter down pretty well. Can't remember the title, but it had 'Gears' in it, maybe? The site's search is a nightmare now, good luck finding anything specific.
