It follows a mild-mannered headmaster lost in a massive, impossible tower. The immersion comes from the sheer inventiveness of each level and Senlin's very human, often frustrating, struggle to adapt. You feel his desperation and his small victories so acutely.

I'm going to go against the grain and suggest something outside of SFF, because literary fiction can be immersive in a different, more psychological way.

'Demon Copperhead' by Barbara Kingsolver. It's a modern retelling of 'David Copperfield' set in Appalachia. The voice of the narrator is so raw, funny, and heartbreaking that you feel embedded in his life, experiencing the systemic failures and small joys right alongside him. It's a different kind of transport.

Does the worldbuilding in 'Perdido Street Station' count as immersive or just overwhelmingly, grotesquely detailed? I'm leaning toward both. Bas-Lag isn't a place you'd want to visit, but you can't help but stare at every horrifying inch. Mieville packs every paragraph with bizarre flora, fauna, and fractured physics. It's a fantasy steampunk nightmare city filled with insect-headed artists, cactus-people, and demons powered by abstract art. The immersion comes from how thoroughly the weirdness is integrated into society's economy and politics. It's not for the faint of heart, but if you want a world that feels alien and intellectually challenging, it's a masterpiece.
