There's a lot of confusion around this because the original 'Beauty and the Beast' novel 'Yao Shou' is a long-running webnovel. The 'manga' is actually a manhua adaptation titled 'Beauty and the Beasts' on platforms like MangaToon. Start with the original novel if you want the complete, unfiltered story—it's the source material for everything. The manhua follows it fairly closely but has a much slower update schedule and condenses some arcs.

Honestly, I'd recommend reading the novel first, up to at least chapter 500 or so, and then you can check out the manhua for the visuals. The manhua is gorgeous and really brings the beast-men designs to life, but you'll be waiting forever for it to catch up. Some readers get frustrated and jump to the novel anyway, so might as well start there. The translation can be a bit rough in places, but the story's addictive quality more than makes up for it.

I think the manhua is a perfectly fine starting point. It's what got me into the whole thing. The art is stunning and it covers the initial setup—modern girl gets transported to a primitive world full of beast-men—really effectively. After I caught up with the available manhua chapters, I was so hooked I went and hunted down the novel translation to continue the story from where the comic left off.

This way, you get the best of both: the visual intro and then the deep dive. Just be prepared for a tonal shift; the novel gets into way more detail about the survival aspects and the... uh, romantic dynamics. The manhua tones some of that down or skips it, which is actually why I prefer the novel's version of certain character arcs.
