Tuesday the bread worked.

She took it out of the oven at nine and we stood at the counter looking at it. The crust had color. The shape had held. It smelled like something that had been done correctly.

She tapped the bottom the way her mother had apparently taught her.

"Hollow," she said.

"Which means."

"Done properly." She set it on the rack. "Twenty minutes before we cut it."

"Why."

"The inside is still setting." She looked at me. "You can't rush the last part."
