We're in a golden age of fantasy, but so much of it is endless series. Trilogies feel like a perfect artistic shape: beginning, middle, end. It's the three-act structure on a macro scale. Finding those perfect, contained three-book stories is a gift for a new reader.
Don't overlook the YA gateway. 'The Hunger Games' is dystopian, but it functions like fantasy for many readers. Suzanne Collins' trilogy is a masterclass in pacing and tension. From there, moving to something like 'Six of Crows' (a duology, I know) or 'The Raven Boys' cycle feels natural.
Don't sleep on 'The Broken Earth' trilogy. It's fantasy, but it's grounded in geology and a deeply personal, mother's quest. The second-person narration in parts throws some people, but it pulls you into the protagonist's fractured mindset. It tackles massive themes like systemic oppression and survival, but the emotional core is so strong you barely notice the world-building lessons you're absorbing.
Lurking this thread because my sister asked me this exact question last week. I gave her three options with very different vibes and let her pick. She went with 'Mistborn' and is already asking for the next Sanderson book, so mission accomplished.

It’s a slightly different flavor because the protagonist is an outsider looking in, which mirrors the reader’s own perspective. You get the full Sparks treatment—quirky townsfolk, a magical legend, a life-changing decision—through the eyes of someone who’s initially skeptical, which is a fun POV for a new reader.
