The best analogy is a prequel TV series. You watch the original show first ('The Hands of Thrones' core books), then you watch the prequel series ('A Leap of Faith' etc.) later. Watching the prequel first would spoil major twists and diminish the impact of the original. The publication order protects those big, juicy reveals. The chronological order sacrifices them for linear clarity.
