I'm just imagining a book club where everyone reads the same slow-burn cowboy romance and has a support group for the frustration. 'I'm on chapter 15 and they still haven't held hands!' 'Stay strong! In the end, the best recommendation depends on what you mean by 'slow burn.' Do you mean slow physical intimacy? Slow emotional vulnerability? Slow integration into each other's lives? All of the above? Pinpointing which aspect is most important to you will help narrow down the massive list of suggestions.
For me, it's slow emotional vulnerability. I want to see the walls come down brick by brick over hundreds of pages. Physical intimacy can happen whenever; it's the sharing of fears, dreams, and past wounds that I want drawn out. So I tend to gravitate towards authors who excel at internal monologue and psychological depth, like some of the historical authors mentioned earlier.

That social pressure is a key ingredient a lot of readers don't explicitly name but definitely feel.

Can we get more cowboy romances where the man is the fish out of water? A city guy inherits a ranch and the local cowgirl has to teach him the ropes? That would be a fun reversal. The slow burn would come from her initial contempt for his incompetence turning into respect for his willingness to learn, and his awe of her skill.
The power dynamics and the traditional gender roles within the small town would be flipped, creating a fresh source of tension. He'd have to prove himself to the whole town, not just her. That's a slow burn I'd devour. I think I've seen a few indie titles with this premise, but it's far from the norm.

The slowness comes from societal constraints, not just personal hesitation. Modern equivalents that get this right are harder to find, but they're out there.
