The character development is sequential. Lily in book two is a direct result of her experiences in book one. You can't understand her cautious optimism without witnessing her trauma. Therefore, the series order is a prerequisite for character understanding, not just plot comprehension.

The fan theories about where the series could go next are fun, but for now, the official series order is a closed loop. Two books that complement each other perfectly. Trying to insert other stories in between would disrupt the very specific emotional journey.

I'd just follow publication order to be safe. 'It Ends With Us' is the foundation. The sequel, 'It Starts With Us', gives you the continuation fans wanted. I haven't heard any credible plans for a third book with these same protagonists, so the series order is currently just those two titles.
