Most of the ones I've read were on AO3. The tagging helps you avoid the 'Natsu is actually a dragon from the start' AUs if you want the transformation arc specifically. I kinda gave up looking for new ones—the trope had its moment like five years ago. What's popular now seems to be crossover stuff where he's a dragon in another universe, which doesn't hit the same notes for me.

It's mostly on AO3 and FF.net still, though the tagging system makes a difference. Archive of Our Own has the edge for me because you can filter for 'Dragon Natsu' or 'Natsu Dragneel Turns Into A Dragon' specifically—some writers use 'Alternate Form' or 'Transformation' tags too. FanFiction.net relies more on summary descriptions, so you gotta skim. Found a few decent ones on Quotev years back, but the scene there dried up.
Honestly, the premise hits a sweet spot between angst and power fantasy. The good ones dig into the body horror of the scales coming in, or the loneliness of outliving everyone. The mediocre ones just make him OP and call it a day. I've seen maybe three or four that actually stuck with me, all on AO3.
Wattpad has some, but the algorithm pushes newer fandoms, so you're sifting through a lot of low-effort 'I woke up as Natsu' stuff. Not worth the hunt unless you're desperate.

FF.net still has the bulk of the older, completed stories for this niche. 'Natsu: The Dragon King' is the classic there, though the prose hasn't aged great. The platform's search is terrible, so I'd find a story I liked and then check that author's favorites list—chain-finding is the only reliable method.
AO3's quality is higher on average now, but the volume for this specific trope isn't huge. It gets lumped in with general 'Dragon Kin' or 'Curse' fics. I miss the old forum days sometimes; dedicated 'Fairy Tail' forums had active threads for transformation AUs that had a different, more collaborative feel.
You can occasionally find snippets on Tumblr or in Discord servers, but those are harder to track down and usually unfinished.

The main site I've seen that dedicated series on is Fanfiction.net, honestly. It's got a massive archive and a long history, so a lot of these older, niche 'what if' series from the mid-2000s fandoms found a permanent home there. I stumbled across a whole saga there about eight years ago where Natsu fully inherits Ankhseram's power after the time skip. It was... rough in places, but surprisingly complete.
Archive of Our Own has picked up a lot of the newer, more polished takes on the concept. You'll find them tagged with things like 'End!Natsu' or 'Natsu Dragneel as Ankhseram'. The tagging system makes finding the darker, more introspective versions way easier than on FF.net. I remember one that was a psychological horror take on the idea, and it was hauntingly good.
For something that specific, you really have to dig through the older archives. Wattpad has some, but they tend to blend more with general overpowered Natsu stories, so the core theme gets diluted.
Archive of Our Own is my top pick for that pairing. The tagging system is so specific you can filter for exactly 'Natsu Dragneel/Erza Scarlet' and then add crossover tags like 'Crossover' or 'Fandom: [whatever other series you want]'. I’ve found a few solid ones blending 'Fairy Tail' with 'One Piece' on there, where the dynamic works surprisingly well because of the similar high-energy vibes. The quality tends to be higher overall, too, since writers put effort into tagging properly.
FF.net is a bit messier to search. You have to go into the 'Fairy Tail' crossover category and then just... scroll. A lot. I usually sort by favorites or reviews to sift through. It's more of a treasure hunt, and you’ll wade through a bunch of unrelated stuff or abandoned fics, but there are some classics from like 2013-2015 era that you won't find elsewhere.
Honestly, I sometimes just search the pairing name plus 'crossover' on Tumblr. A lot of writers post snippets or links to their AO3 works there, and the reblog chains can lead you to some hidden, moodier pieces that don’t get a ton of traction on the big archives. It’s less organized, but feels more like stumbling onto someone’s personal obsession, which I kinda love.
