I just binged the first Neon Gods book but someone mentioned the Hades & Persephone timeline's reading sequence doesn't match when the novels were actually published?

Katee Robert published 'Neon Gods' (the Hades POV part) first, followed by Persephone's side. Then she expanded the world with other myths.

Each new book is a new couple, but the overarching world state progresses. The consequences of Hades and Persephone's alliance ripple outward, affecting Eros's story, which in turn sets the stage for the contest in 'Wicked Beauty'. Reading them out of order would give you the ripples without understanding the stone that caused them.

So, yes, publication order is king. It's also the order the author conceived them in, which usually means the themes and character development build most effectively that way.
