There's the classic 'injury/comfort' scenario where one gets hurt saving the other, leading to sudden realizations. Then you have the 'jealousy' plots, often involving Jellal or some random OC making Natsu possessive.

What I find more interesting, though not always well-executed, are stories that try to slowly erode their initial dynamic. Erza letting her guard down, Natsu showing uncharacteristic maturity—it's a tough needle to thread. Too often it slips into OOC territory where Natsu becomes overly solemn or Erza turns weepy. The tension, when it's done right, comes from that shift in how they see each other, not from some external love potion or spell. I've clicked away from more fics than I've finished because the build-up just didn't feel earned.
