Hugo pulled out my chair, then took his seat across from me, mimicking formal grace though his gaze was anything but.
“The magic of this dessert,” he said, cracking the caramel with the edge of his silver spoon, “lies in the very moment you break its surface. A fleeting joy, just before the sweetness coats your tongue.” He slid some of the broken sugar onto my plate. “Taste it, and tell me what note hits you first.”
I dragged my spoon across the surface, scooping both shards of caramel and the soft custard beneath.
“Tahitian vanilla,” I said after a bite, “then a whisper of barrel-aged rum. But most of all, the burnt edge, the faint bitterness of scorched sugar.”
